I have never used a good glue stick. I am still using kindergarten glue sticks.

Glue sticks are amazingly handy for hand work, tucking in seams, EPP, and aligning fabric edges for sewing so the fabric doesn’t shift. Those are just a few ideas.
Also I’m hoping to get in to your new class on the next round!!

I’ve never used a glue stick for basting EPP, and wonder how long it would last on the papers or how hard the papers would be to remove.

The glue holds a very long time. It might be affected by humidity, but I have not noticed that myself. If you use too much glue, it is harder to remove the papers without fraying the fabric which is why you use the glue with a light touch :-).

I suppose the glue washes out and does not leave any residue?

It would depend on where you use it and if you wash the quilt afterward. If you do, it should wash out. In EPP, if you put the glue on the paper, there shouldn’t be much residue on the fabric.
